We are so in love with this salad, and it makes a regular appearance on our dinner schedule. We always have tomatoes and basil in our garden every summer and that only adds to the freshness and brightness of the dish. We add some extra protein with thinly sliced prosciutto and that salty, porky flavor really enhances the mozzarella.
I think this is one of those dishes that, since there's only a few ingredients, those ingredients should be top tier. It really makes all the difference.

INGREDIENTS:
1 large tomato, sliced into 1/2 inch slices (6 slices)
1 ball soft mozzarella, sliced into 1/2 inch slices (6 slices)
6 slices prosciutto
1/4 cup basil leaves (or 6 large leaves)
1/4 cup olive oil
1/4 cup balsamic vinegar
Course sea salt
Pepper to taste
DIRECTIONS:
On a platter, place a piece of mozzarella on top of each piece of tomato.
Arrange the prosciutto slices on top of the mozzarella.
Divide the basil between the stacks.
Drizzle the oil and vinegar over the top of the stacks.
Add salt and pepper to taste and enjoy!
