Apple "Fry" Pie

My paternal grandfather grew up Amish, so growing up, my family would head down to Ohio's Amish Country a few times every year to visit relatives or just pick up some great food. One of my favorite treats to get when I'm there are fry pies, which are essentially fruit turnovers that are fried and then glazed like a donut.


Here is my version which is NOT fried mainly because I wanted to make it a little healthier (quarantine has NOT been friendly to my waistline). It uses my favorite apple pie filling recipe, my mom's pie crust, and a glossy, sweet glaze. If you're looking for a pandemic-friendly way to share some baked goods, this is one to save!

INGREDIENTS:

  • 2x prepared pie crusts

Filling

  • 1/2 cup butter

  • 3 Tbsp flour

  • 1 lemon

  • 1/2 cup sugar

  • 1/2 cup packed brown sugar

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 8 apples, peeled, cored, and thinly sliced

Glaze

  • 1 tsp vanilla

  • 1 cup powdered sugar

  • 2 Tbsp milk

DIRECTIONS:

Preheat oven to 375 degrees F. Prepare a cookie sheet with parchment paper or a silicon baking mat.

Combine all ingredients for the filling in a large bowl. Set aside.

Roll out the prepared pie crust to 1/4 inch thickness. I like to add a sprinkle of cinnamon to the crust before I roll them out. Using the mouth of a 6-inch bowl as a template, cut out 6 circles (you'll have to re-roll out the scraps until you have enough).

Spoon 1/3 cup of the filling into the center of each circle. I used a slotted spoon to keep excess liquid out of the filling.

Carefully fold the dough over the filling and crimp the edges. You can also press the edges with a fork if you aren't too confident crimping with just your fingers.

Arrange the fold-overs on your prepared cookie sheet. Using a fork, prick a few holes in the top of the turnover so the steam can escape while it's baking. If you want a little more color, you can brush the tops of each turn-over with a beaten egg splashed with a little milk.

Bake for 20 minutes, then place on a wire rack to cool.

Prepare the glaze by combining all of its ingredients in a small bowl. When the turn-overs have cooled, spoon the glaze over each of them. Let the glaze harden before you enjoy your baked "fry" pie!
