Blackberry Peach Galette

Since living in the south, peach has become one of my favorite flavors so I jump at any excuse to add it to a recipe! I made this galette for my parents when they came to visit me right before I deployed. It was the end of August, so that hot Carolina sun was setting on my back patio when I brought a few of these out after dinner. They were served warm, with a big scoop of vanilla ice cream and for that 15 minutes as everyone was digging in, I realized how much I was going to miss my kitchen while I was gone. Enjoying homemade creations with those you love is truly my favorite part of baking - you get to create an experience that everyone gets to partake in together!


Galettes are just pies without dishes, and they're crazy easy to make. I've shared a savory galette on this blog already but it's high time I share a dessert one.

 

Servings: 1x 10in Galette

Prep Time: 20 min

Total Time: 1 hour


INGREDIENTS:

  • 1 pre-made, store bought pie crust (or make your own!)

  • 5-6 fresh peaches, pitted and sliced

  • 1 1/2 cup fresh blackberries

  • 1/2 cup sugar

  • Juice and zest of half a lemon

  • 2 Tbsp corn starch

  • 1 Tbsp cinnamon

  • Pinch of salt

  • 1 egg, beaten

  • Sugar for sprinkling


DIRECTIONS:

  1. On a lightly floured surface, roll out your pie crust to be about 14 inches round and about 1/8th inch thick.

  2. Transfer dough to a baking sheet that's lined with parchment or a silicon baking mat.

  3. Preheat oven to 375 degrees F.

  4. In a large bowl, combine the peaches, blackberries, sugar, lemon juice, lemon zest, cinnamon, cornstarch, and salt.

  5. Arrange the fruit mixture on top of the pie crust, and spread it out in a circle that stops two inches from the edges.

  6. Fold up the edges of the pie crust over the fruit and overlap the dough as you go around the entire crust.

  7. Brush the edges of the dough with your beaten egg, then sprinkle a little sugar on the crust.

  8. Bake for 40 minutes or until the crust is a golden brown and the filling is bubbling!
