This is another easy breakfast that can feed a crowd and can be prepped the night before. You also only need a few ingredients for this guy. I first made this when I was at Tech School in Texas and brought it in for my classmates. It was gone in minutes so I guess it's alright.
I'm also told this goes great with a cup of coffee since it has a danish feel to it.

INGREDIENTS:
A large package of pre-baked croissants (you can get them in the bakery section of most grocery stores)
1 cup fresh blueberries
1 package (8oz) cream cheese
2/3 cup sugar
2 eggs
1 tsp vanilla
1 cup milk
DIRECTIONS:
1. Preheat oven to 350 degrees and grease a casserole dish - I normally use a 9x13.
2. Tear apart the croissants into bite-sized pieces and spread in pan. Sprinkle with blueberries.
3. Add remaining ingredients, except the milk, to a bowl and beat with an electric mixer for 2 minutes. Gradually add the milk and beat another 2 minutes. The mixture will be a little chunky.
4. Pour that mixture evenly over the croissant pieces and blueberries in the casserole dish. Let stand for 20 minutes so the croissants have a chance to soak in the milk mixture or let it hang out in the refrigerator overnight.
5. Bake for 35-40 minutes or until set in the center. You might want to cover it with foil for the last 10 minutes if it looks like it's getting too dark.
6. Serve warm, and sprinkle with powdered sugar if desired.
