For those who don't know me, I work with the World's Greatest Pilots... in the World. And because I've been baking so much lately, there's no way Cole and I can eat everything I've been making without hating ourselves. Luckily I have a bunch of hungry pilots to test my recipes on who (I think) are more than happy to take some of these treats off my hands.
These chewy butterscotch blondies were a hit with the guys at work, and I now prefer these over a normal brownie any day! The brown sugar brings a warm sweetness and the butterscotch brings you back for another bite. There's a little salt sprinkled on top that rounds out the flavor and I know these will also be a hit with whoever you choose the share them with!
Servings: Makes 24 blondies

INGREDIENTS:
2 cups flour
1 tsp baking powder
Pinch of salt
1 cup (2 sticks) butter, melted
1 1/3 cup brown sugar
1 large egg + 1 egg yolk
2 tsp vanilla extract
Approximately 3/4 of an 11oz bag of butterscotch chips
Extra sea salt, for sprinkling
DIRECTIONS:
Preheat the oven to 350 degrees F and grease a 9x13 pan.
Using a stand or hand mixer, combine the melted butter and brown sugar. Add in the egg, egg yolk, and vanilla and mix well.
On a low speed, slowly add in the flour, baking powder, and a pinch of salt. Once all combined, fold in the butterscotch chips using a spatula.
Evenly spread the batter into the prepared pan, making sure to spread it all the way to the corners. Sprinkle sea salt over the top.
Bake for 35 minutes. Let cool in the pan completely before serving.
