Cherry Almond Baked Brie

This is a great appetizer and goes amazingly with wine (say no more?). It also looks crazy fancy and isn't difficult to make. Who doesn't like melted cheese? You can also use any jam you have if you aren't a cherry fan, or try walnuts, brown sugar, and maple syrup for a fall twist - then sprinkle the crust with cinnamon sugar - choose your own adventure!


I like to make this when I have guests and we are just sitting around and chatting or watching a movie while sipping on a glass (or bottle) of wine. It has also been the centerpiece of a hand-full of charcuterie boards in my day!

INGREDIENTS:


  • 1 pre-made pie crust or puff pastry dough

  • 1 round of Brie

  • 1/4 cup almonds (sliced or whole, toasted)

  • 1/4 cup cherry preserves (or jam/preserves of your choice)

  • 1 Tbsp honey

  • 1 egg

  • 1 Tbsp sugar


DIRECTIONS:


1. Preheat oven to 375 degrees F. Cut the top off the brie and place it, cut side up, in the center of the pie crust/puff pastry dough that had been rolled out thinly (about 1/4 inch thick).

2. Spread jam/preserves on top of the brie, sprinkle the almonds on top of the jam, then drizzle honey on top of that.

3. Fold the pie crust tightly up the sides of the cheese and over the top of the almond mixture to cover the entire round of cheese. You can cut another small piece of crust with a cookie cutter to cover the top where the sides meet. If there is a lot of left over crust at the top, trim it down - you don't want a thick chunk of crust to eat!

4. Place on a baking sheet that has been covered with parchment or a silicon baking mat.

5. Beat an egg and brush it over the entire crust. Sprinkle with sugar.

6. Bake for 20 minutes or until the crust is golden. Serve warm with crackers and fruit - like apples and strawberries.
