Cherry Cobbler

I tell you what, the Crock Pot is such a life saver on many accounts. I had already made a chocolate lava cake in a Crock Pot, and I had wanted to try new recipes. My mom had sent me a bunch of random mixes and ingredients in one of her care packages to me during this deployment, and one of those ingredients was a can of cherry pie filling. One of the recipes that my boyfriend's mom shared with me last year was a super easy dump cake and I channeled that recipe when I decided to make something in the Crock Pot out here one night.

I used white cake mix for the base of the cobbler, poured the cherry pie filling on top of the cake mix, and then tried to find something crunchy to put on top. One of my friends in she squadron helped me find some granola that we crumbled on top! Honestly, this was my favorite deployed recipe that I've concocted out here! Unfortunately, you'll have to enjoy the picture I had to take outside of the treat before it was all gone - I'll upload better pictures when I make this again when I'm home!

Servings: 12

Prep Time: 10 min

Total Time: 2 hours 40 min

INGREDIENTS:

  • 1 box white cake mix

  • 3 eggs

  • 1/2 cup butter, melted

  • 1/3 cup vegetable oil

  • 1 can cherry pie filling

  • 1 cup granola

DIRECTIONS

  1. Liberally spray the Crock Pot with cooking spray.

  2. In a medium bowl, combine cake mix, eggs, butter, and oil. Pour in the bottom of the Crock Pot.

  3. Pour cherry pie filling evenly on top of the cake mix. Take a knife and gently swirl the cake mix and the cherry filling. Do not completely mix together - you'll want some pockets of cherries and pockets of cake.

  4. Sprinkle the granola over the top.

  5. Turn Crock Pot to high and let cook, covered, for 2 and a half hours.

  6. Enjoy, preferably with ice cream!
