Cinnamon Roll Coffee Cake

This is made completely of basic pantry ingredients and can be whipped up in about 45 minutes! I made this for breakfast when my mom and awesome aunt came to visit for a few days. I still had to go to work, but I wanted them to have something to break into when they woke up. When baking, the entire house was filled with a warm, sweet smell. The cake itself is just a basic light cake with a cinnamon and brown sugar topping, and I added a powdered sugar vanilla icing to add that cinnamon roll vibe.

INGREDIENTS:

For the cake...

  • 1/2 cup butter, melted

  • 2 eggs

  • 1 cup sugar

  • 3 cups flour

  • 2 tsp vanilla

  • 4 tsp baking powder

  • Pinch of salt

  • 1 1/2 cups milk

For the topping...

  • 1 cup butter, melted

  • 2 Tbsp flour

  • 1 cup brown sugar, packed

  • 1 Tbsp cinnamon

For the glaze...

  • 2 cups powdered sugar

  • 5 Tbsp milk

  • 1 tsp vanilla

DIRECTIONS:

  1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish.

  2. Mix all the cake ingredients together in a large bowl until combined. Pour into prepared pan and spread to the edges and into the corners.

  3. For the topping, mix all the topping ingredients together in a small bowl and spread the mixture over the top of the cake mixture. Swirl with a knife to create a marble effect.

  4. Bake for 30 minutes.

  5. For the glaze, mix all glaze ingredients together. If it seems too thick, add a little more milk. If too thin, add a little more powdered sugar.

  6. While the cake is still warm, drizzle the glaze over the cake and allow to set for 5 minutes before serving.
