Classic Apple Pie

This is the first recipe I ever memorized and it's one of my favorite things to make when I'm stressed out. There's something about the smell of a really great apple pie that fills up the house, especially in the fall when it's starting to get cold outside, that puts me in a really good mood.


You can also alter this recipe to change it up a little so it's not the same every time. I included my recipe for streusel topping at the bottom of this page if you don't want to add a top crust. You can mix in some chocolate chips, drizzle some caramel on top, or if you're one of those people, fold in some shredded cheddar cheese. It's your pie. I won't judge you.

INGREDIENTS:


  • Prepared pie crust (2 if you are doing a top crust)

  • 1/2 cup butter

  • 3 Tbsp flour

  • 1 lemon

  • 1/2 cup sugar

  • 1/2 cup packed brown sugar

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 8 apples, peeled, cored, and thinly sliced*

* I like to use half Granny Smith apples and half Gala apples - it's a nice balance between tart and sweet!


DIRECTIONS:


1. Preheat oven to 425 degrees and grease a 9 inch pie dish. Place the bottom pie crust in the dish.

2. Gently mix the rest of the ingredients except the butter in a large bowl and spoon the mixture into the prepared pie dish.

3. Place little chunks of butter (about 1/2 Tbsp size) on top of the filling.

4. Place a top crust or streusel topping on top of the pie and crimp the edges. If using a top crust, be sure to cut some slits in the crust for hot air to escape. Brush the crust with an egg wash and sprinkle with sugar.

5. Place the pie on a cookie sheet lined with foil before placing in the oven in case it leaks and you won't have to waste a lot of time cleaning your oven afterwards!

6. Bake 40-45 minutes or until the apples are tender and the crust is golden brown. I like to cover the edges of my pie with aluminum foil for the first 20 minutes to help keep the edges from burning.

7. Enjoy! Preferably warm with a scoop of vanilla ice cream!



 

Streusel Topping


INGREDIENTS:


  • 1 cup brown sugar

  • 1/2 cup flour

  • 1/2 cup baking oats

  • 1/4 cup coconut (optional)

  • 1/4 cup butter, at room temperature


DIRECTIONS:


Mix all ingredients together - I like to use my hands to break up the butter a little better. If it seems a little dry, you can add a bit more butter, but don't get too crazy. Cover pie with streusel and bake as directed above.
