Confetti Cookies

Who doesn't love Funfetti cake? Here's my version of its cookie counterpart!


Ultimately, it's your classic sugar cookie that's ready for a party. Super simple and quick to make, I think I had my first taste in less than a half hour of putting the first ingredient in the bowl! These are also great to theme depending on the season - red, white, and blue sprinkles for the 4th of July, red and green for Christmas, fall colors for Halloween/Thanksgiving, etc.


Be warned, however - these soft, buttery cookies are addicting and I find it nearly impossible to have just one!



 

Servings: 2 doz cookies

Total Time: 20 min


INGREDIENTS:


  • 2 & 1/8 cup flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 cup (2 sticks) butter, softened

  • 2/3 cup sugar

  • 3/4 cup powdered sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 2/3 cup sprinkles


DIRECTIONS:


  1. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicon baking mats.

  2. In a mixing bowl (I used my stand mixer, but you can also use a hand-held mixer), beat butter, sugar, powdered sugar, and vanilla on medium low for 4 minutes. Beat in egg.

  3. Reduce speed to low and add flour, baking soda, and salt.

  4. Hand mix in the sprinkles with a spatula or large spoon.

  5. Scoop out ping-pong ball sized balls of dough (roughly 1.5 Tbsp - I used a small ice cream scoop) and place on the prepared cookie sheets 2 inches apart.

  6. Bake for 10 minutes. Allow to cool on the cookie sheets for 5 minutes before transferring them to a wire rack to cool completely.
