Corn Casserole

This is my staple Thanksgiving side. It takes less than 7.7 minutes to put together before popping it in the oven. Essentially it's a gooier version of cornbread.


You can add other flavors to this guy too. Mix in a taco seasoning packet and a little diced jalapeno for a Mexican twist or class it up with some fresh rosemary and a sprinkle of sea salt.


Side note, this pairs really well with a cold glass of bourbon... just saying...


 

INGREDIENTS:


  • 1 can sweet corn, drained

  • 1 can creamed corn

  • 2 eggs

  • 8 oz sour cream

  • 1/2 cup melted butter

  • 1 box Jiffy corn muffin mix

  • 1 Tbsp paprika

  • 1 tsp cayenne pepper (optional)


DIRECTIONS:


1. Preheat oven to 350 degrees and grease a 9x13 casserole dish.

2. Mix all ingredients together in a large bowl and pour into the greased pan.

3. Bake for 45-50 minutes, until golden brown. That's it. That's the whole recipe.
