Crock Pot Chocolate Lava Cake

If anyone has been following this blog and/or my Instagram (@bkrsgonnabake), then you'll know I've been deployed for the last 6 months and have had to get creative to get my baking fix. The Crock Pot has come in handy a few times now and I've been able to try out some new recipes. Unfortunately, mail out here is pretty slow, so when I asked my sweet mother to send me some cake mixes and other ingredients, the box she sent didn't arrive for over a month. I had planned to make a chocolate cake for Valentines day, but the ingredients for it never arrived in time. Instead, I made this cake on the day I promoted!


As an officer in the Air Force, the tradition is that the promotee caters a meal or pays for a night out for their co-workers. Well where we are there's no alcohol nor anywhere to "go out" so I opted for getting a bunch of pizzas and making something sweet and decadent! I had heard you can make chocolate lava cake in a crock pot, but I've never done it before and I didn't quite have all the ingredients for any of the actual recipes I found, so I ended up Frankensteining it and coming up with my own. Honestly, I didn't know how well this would turn out, but it ended up being quite delicious! One of my deployment besties, Jav, doubled down and procured a big tub of vanilla ice cream for me to serve with the cake, so that amped up the experience for my pilots and the rest of my squadron even more!

Total Time: 2 hours 40 min


INGREDIENTS:

  • 1 box Betty Crocker™ Super Moist™ Triple Chocolate Fudge Cake Mix (you can also use regular cake mix, but also add 1 box of instant chocolate pudding mix)

  • 3 eggs

  • 2 cups milk

  • 1/2 cup vegetable oil

  • 2/3 cup sour cream

  • 1 can of chocolate frosting

  • 1 12 oz bag of chocolate chips


DIRECTIONS:

  1. Spray a large crock pot (6-quart) with non-stick cooking spray.

  2. In a large bowl, mix the cake mix, eggs, milk, oil, and sour cream until all combined. Pour the mixture into the crock pot.

  3. Drop the frosting by the spoonful into the cake mixture, distributing it evenly throughout the batter. Using a knife, swirl the icing throughout the mixture, but DO NOT fully incorporate the icing. You'll want little pockets of gooey-ness throughout the cake.

  4. Sprinkle the chocolate chips on top of the batter/icing creation, but try not to get the chocolate chips too close to the sides of the crock pot because it may burn.

  5. Cover, and cook on low heat for 2 hours 30 minutes. The cake should be springy, so if not, let it bake a little longer!

  6. Serve warm with vanilla ice cream and chocolate syrup!
