Dutch Baby

This is one of my favorite most recent discoveries! Easy and delicious, this Dutch baby, also known as a German pancake, is crispy on the edges, but soft and sweet on the insides. It's kind of like a mix between a crepe and a pancake. You can put anything you want inside after it's baked - marscapone cheese and berries, baked apples, butter and jelly, syrup - but I prefer mine with a squeeze of lemon and powdered sugar. It takes less than a half hour, start to finish, and it's something you will definitely want to make again after trying it the first time!


If you don't have a cast iron skillet, don't fret - you can also make this in a cookie sheet! I'll put the instructions for that at the bottom of the page.

 

Servings: Makes 1x 9-inch Dutch baby

Total Time: 25 min


INGREDIENTS:

  • 2 Tbsp butter

  • 1/3 cup flour

  • 1/4 tsp salt

  • 1 tsp sugar

  • 1/4 cup milk

  • 1/2 tsp vanilla extract

  • 2 eggs


DIRECTIONS:

  1. Preheat oven to 425 degrees F. Spray a 9 inch cast iron skillet lightly with cooking oil. Place skillet in the oven to heat while you are making the batter.

  2. Melt 1 Tbsp butter in the microwave. Place melted butter, flour, salt, sugar, milk, vanilla, and eggs in a blender and mix until well combined. (You can also do this with a bowl and hand mixer)

  3. Carefully pull the heated skillet out of the oven and melt the other Tbsp of butter in the hot skillet. Pour the batter in the skillet and place it back in the oven. Bake for 15-20 minutes. It should be puffed but crispy and golden on the edges.

  4. I like topping my Dutch baby with a squeeze of lemon and powdered sugar, but really it's a great vessel for any kind of fruit or topping you can think of! Serve immediately while still hot!

If you want to make a larger batch or if you don't have a cast iron skillet, you can triple the recipe and use a large dark cookie sheet - just make sure the sides are at least an inch high. This will serve 8-12 people. Spray the cookie sheet with non-stick spray, then treat the cookie sheet the same way you would the skillet and heat it in the oven before you add the batter. Bake for 15-20 minutes
