Frozen Peanut Butter Cups

I made these for a diet I've been working on and oh mylanta, were these a dark horse! At only about 300 calories, these are a great little dessert or snack during the day and definately satisfy any sweet tooth. These would make great little popsicles too, if you add a popsicle stick in the middle of each treat after it has been in the freezer for about 45 minutes.

INGREDIENTS:

  • 4 small bananas

  • 1 can coconut milk

  • 2 Tbsp honey

  • 5 Tbsp melted coconut oil

  • 1 cup + 1 Tbsp peanut butter

  • 1 tsp sea salt

  • 3/4 cup dark chocolate chips


DIRECTIONS:

  1. Prepare a 12 serving cupcake pan with paper cupcake liners.

  2. In a blender, combine the bananas, coconut milk, honey, 4 Tbsp coconut oil, and 1 Tbsp peanut butter. Pour about a half inch of the mixture into the bottom of each cupcake hole. Put the pan into the freezer for 10 minutes.

  3. In a small bowl, combine the rest of the peanut butter and sea salt. Take the pan out of the freezer and put a Tbsp of the peanut butter salt mixture in each cupcake hole. Fill the cupcake holes with the remaining coconut milk mixture and place back into the freezer for another hour.

  4. In a microwave safe bowl, combine the chocolate chips and remaining coconut oil. Microwave in 30 second intervals, stirring well between each session until completely melted.

  5. Spread a Tbsp of melted chocolate on top of each frozen "cupcake" and place back into the freezer for another 3 hours to completely set up before serving.
