Gluten Free Peanut Butter Scones

Peanut butter is one of this world's greatest flavors, and I jump at any opportunity to bake or cook with it. As stated in previous posts, I have some good friends who are gluten free and every time they look at this blog, they comment on how everything looks delicious and how they would love to try more of what I make. I've been trying to make an effort to include more gluten free recipes that are easy and scrumptious!


These scones are great with a big glass of cold milk. They're crumbly and soft and make a great snack or lunch-time dessert. Spread a little strawberry jam on top for a nostalgic taste combo!

 

Servings: Makes 8 large scones

Prep Time: 15 min

Total Time: 40 min


INGREDIENTS:

  • 2 cups gluten free flour

  • 1/4 cup sugar

  • 1 Tbsp baking powder

  • Pinch of salt

  • 1/3 cup butter (softened)

  • 1/2 cup plain Greek yogurt

  • 1/2 cup peanut butter

  • 1/4 cup milk

  • 1 egg


For the Glaze

  • 1 Tbsp peanut butter

  • 1/2 cup powdered sugar

  • 2 Tbsp water


DIRECTIONS:

  1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper or a silicon baking mat.

  2. In a large bowl, combine flour, sugar, baking soda, and salt.

  3. Cut butter into small pieces (about the size of a pea). Add the butter to your dry ingredients and mix until the butter has been evenly distributed.

  4. In a small mixing bowl, combine the yogurt, peanut butter, milk, and egg. Pour the wet mixture into the flour/butter mixture and gently mix it all together until a soft dough forms.

  5. Using your hands, form the dough into a sphere. Put the sphere in the center of the prepared cookie sheet and gently press down to form a disk that's about an inch and a half tall.

  6. With a sharp knife, being careful not to slice through your parchment paper or baking mat, cut the disk of dough into 8 equal wedges. Separate the wedges at least an inch.

  7. Bake for 15-18 minutes or until the scones are firm to the touch. Let cool.

  8. Combine all glaze ingredients until smooth (Pro-tip: Microwave the peanut butter that goes in the glaze for 20 seconds before mixing it in). Drizzle glaze over top of the scones and enjoy!
