Holiday Pumpkin Pie

I'm not a major fan of pumpkin, really the only pumpkin anything I will eat is my mom's pumpkin roll (which I twisted in couple other posts). But my family loves pumpkin pie and my best friend loves pumpkin anything (#basic). Leann, this is dedicated to you - congrats. You did it.


 

INGREDIENTS:


  • 1 prepared pie crust

  • 3/4 cup sugar

  • Pinch of salt

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/2 tsp nutmeg

  • 2 eggs

  • 1 can (15 oz) pumpkin puree

  • 1 can (15 oz) evaporated milk


DIRECTIONS:


1. Preheat oven to 425 degrees and grease a 9 inch pie dish. Place the bottom crust in the dish, crimp the edges, and set aside.

2. Beat eggs in a large bowl. Add in sugar, salt, and spices until combined. Stir in pumpkin.

3. Gradually stir in the evaporated milk until everything has just barely combined.

4. Pour mixture into pie shell.

5. Bake for 15 minutes. Reduce temperature to 350 degrees and bake for another 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool before serving.
