M&M and Chocolate Chip Cookie Bars

I whipped up this recipe to take to work one day and of course, my pilots gobbled them up like crazy. These bars are sweet and buttery with the little surprise of M&Ms inside so you can't really go wrong. Plus, instead of having to scoop out the batter and drop it onto cookie sheets, you just have to pour the whole thing in a pan and slice it when it's baked and cooled! Too easy!

INGREDIENTS:

  • 1 1/2 cups flour

  • 1 tsp baking powder

  • Pinch of salt

  • 1 1/2 cups light brown sugar, packed

  • 3/4 cup butter, melted

  • 2 eggs

  • 2 tsp vanilla

  • 3/4 cup mini M&Ms


DIRECTIONS:

  1. Preheat oven to 350 degrees F and grease the inside of a 9x13 inch baking dish.

  2. In a large bowl (I use a stand mixer), beat butter and sugar for 1 minute. Then add eggs and vanilla and blend until smooth.

  3. With the mixer on low speed, add the flour, baking powder, and salt.

  4. Fold in the M&Ms with a spatula.

  5. Pour mixture into the prepared pan and spread it out evenly to fill the pan. Feel free to sprinkle more M&Ms on top and press it into the dough.

  6. Bake for 25 minutes. Let cool completely before slicing!
