Milk and Cookies Cake

This is one of the prettiest cakes I've made to date. It sliced like a dream and tasted exactly how it sounds! The cake has chocolate chip cookies bakes right into it, and the buttercream is made with sweetened condensed milk, so each bite takes you back to your childhood when you dipped all your cookies in a big glass of cold milk. It's easy to decorate and is a great show-stopper for your next dinner party! The best part? It's a cinch to make.

INGREDIENTS:

For the Cake...

  • 1 1/2 cups (3 sticks) butter, softened

  • 2 1/4 cup sugar

  • 4 eggs

  • 1 Tbsp vanilla

  • 3 cups flour

  • 1/4 cup cornstarch

  • 2 tsp baking powder

  • Pinch of salt

  • 1 1/4 cup milk

  • 1 cup mini chocolate chips

  • 10 Chips Ahoy Cookies, crushed


For the Frosting...

  • 2 cups (4 sticks) butter, softened

  • Pinch of salt

  • 14 oz (1 can) sweetened condensed milk

  • 2 cups powdered sugar

  • Whole Chips Ahoy Cookies for garnish


DIRECTIONS:

  1. Preheat oven to 350 degrees F. Grease and line the bottom of two 9-inch round cake pans with parchment paper.

  2. To make the cake, beat together the butter and sugar in a large bowl until smooth and fluffy.

  3. Add eggs one at a time, beating well after each addition. Add vanilla and mix again.

  4. In a separate bowl, combine the flour, cornstarch, baking powder, and salt.

  5. Add half of the flour mixture into the wet mixture and combine. Add the milk into the wet mixture and mix again. Finally, add the remainder of the flour mixture and mix until everything is incorporated.

  6. Fold in the mini chocolate chips and crushed cookies.

  7. Divide the batter evenly between the two prepared pans.

  8. Bake for 40 minutes. Allow to cool completely before assembling.

  9. To make the frosting, using a stand or hand mixer, beat the butter and salt on medium high speed until light and fluffy for about 5 minutes. This helps air get incorporated into the frosting to make it smooth. Reduce speed and add the sweetened condensed milk, then the powdered sugar. Mix until there are no lumps.

  10. When the cakes are cooled, level the tops to make sure each one is flat on both sides. Place a small spoonful of frosting in the center of the platter you're using and place the bottom layer of cake on top. This will keep your cake from sliding all over the platter as you're trying to frost it. Add about a cup of frosting on top of the bottom layer, spread to the edges, then place the other layer of cake on top. Frost the top and sides of the cake, then decorate the sides and top with any reserved cookies. Enjoy!
