Peaches and Cream Pie

Being in the south, I have become a giant fan of anything peach. The flavor connects me to the summer and being outside in the sunshine so it's a happy taste for me! I'd wanted to make something with peaches since I got back from deployment, but I wanted to make something other than a traditional peach pie.


This pie is instead the cross between a cake and a pie and a cheesecake! It has a crust, yes, but it's very soft. It has slices of real peaches inside, but on top is a layer of sweetened cream cheese that gets gooey and delicious in the oven! I made this for a friend for her birthday, but had to make a smaller pie for Cole and myself to try. It turned out so much better than anticipated and was stupidly easy to put together. Served warm, it's more like a cobbler, but served cold or at room temperature, it's a refreshing summer dessert!

INGREDIENTS:

  • 3/4 cup + 2 Tbsp flour

  • 1 tsp baking powder

  • Pinch of salt

  • 3 Tbsp corn starch

  • 1/2 cup sugar

  • 1/4 cup butter (half a stick), softened

  • 1 egg

  • 1 tsp vanilla

  • 1/2 cup milk

  • 1 large can of sliced peaches

  • 3 Tbsp peach syrup (from the can of peaches)

  • 8 oz cream cheese (1 package), softened

  • 1/3 cup sugar

  • 1 1/2 Tbsp cinnamon sugar (if you don't have cinnamon sugar, just mix 1 part cinnamon to 2 parts sugar)


DIRECTIONS:

  1. Preheat oven to 350 degrees F and spray a 10 inch pie dish with cooking spray.

  2. In a bowl, mix together flour, baking powder, salt, corn starch, and 1/2 cup of sugar.

  3. Add butter, egg, vanilla, and milk and mix until smooth, about 3 minutes (longer if you're mixing by hand).

  4. Pour batter into the pie dish.

  5. Arrange sliced peaches on top of the batter in the pie dish. The peach slices will likely sink because the batter is thin, but don't worry - that's supposed to happen!

  6. In another bowl, beat cream cheese, peach syrup, and 1/3 cup sugar until creamy.

  7. Carefully spread the cream cheese mixture on top of the peaches, while not touching the edges of the pan (stay within an inch of the edges).

  8. Sprinkle the top of the pie with the cinnamon sugar.

  9. Bake for 40 minutes. Let cool at least 10 minutes before serving!
