Peanut Butter Bacon No-Bakes

There she goes again, putting bacon in desserts... I have no regrets, people!


As stated in other posts, I've been lucky enough to volunteer with an amazing Girl Scout troop here in Sumter. Although my time here is coming to a close, I'm so excited for the girls to visit me in Savannah next year! If you didn't know, Savannah is basically the Mecca of Girl Scouting in the USA. It's where our founder, Juliette Low was born and where she founded the very first Girl Scout troop back in 1912. Every summer, the Girl Scouts of the USA host Quest Fest - a scavenger hunt meets Amazing Race - in downtown Savannah and hundreds of girls travel with their troops to take part in that weekend! The troops are given dozens of "quests" to complete throughout the weekend, which could be anything from trying to get the giant container ships passing by to blow their horn, to bringing canned goods to a food pantry. The more quests completed, and the more creative they are in their completion, the more points will be awarded to that troop. The troop with the most points at the end of the weekend wins a monetary prize that gets put toward their troop!


The last 2 years have been virtual due to Covid, but that didn't deter our girls at all. We teamed up with a fabulous troop from Mississippi and had an AMAZING time! Last year, our team came in 7th place out of about 90 teams, and this year, we won the whole dang thing! The troop from Mississippi will be spending their share of the prize money on improvements to a local park, while our share will be spent on purchasing lifetime memberships for our graduating girls and saving some to travel to Savannah next year when QuestFest is in person again!


One of the virtual quests this year was to create a new Girl Scout Cookie with an unexpected ingredient. Our team, obviously, gave me that quest to complete, and this is what I came up with! It's essentially a peanut butter Rice Krispy treat with peanuts, toffee bits, and chopped up bacon thrown in. I wasn't mad about it. And Cole ate all of the leftovers before the event was even over!

 

Servings: 2 dozen

Prep Time: 10 min

Total Time: 30 min


INGREDIENTS:

  • 2 Tbsp butter

  • 1 10oz bag of mini marshmallows

  • 1/3 cup creamy peanut butter

  • 4 cups puffed rice cereal (Cheerios would work well too!)

  • 1/2 cup plain roasted peanuts

  • 8 slices of bacon, chopped into small pieces

  • 1/3 cup toffee bits


DIRECTIONS:

  1. In a bowl over medium heat, melt butter and marshmallows. Add peanut butter and stir until smooth.

  2. Remove from heat and add the rest of the ingredients. Stir until all combined.

  3. Line an edged cookie sheet with parchment paper and spray with nonstick cooking spray. Press the mixture into the pan and let cool and harden for at least 20 minutes. If you would rather have thicker bars, you can use a 9x11 inch baking dish - just grease it well!
