Peanut Butter Oatmeal Energy Bites

I started making these back when I was in college as something quick to eat between classes or on my way to the dance studio or gym. They are gluten free no-bakes that taste like a cookie, but are sweetened mainly with honey instead of added sugar. You can also add pretty much any kind of fixins to these guys too. My go-to is dark chocolate chips, but you can add M&Ms, flax seed, sunflower seeds, dried fruit, or like I did with this recipe, butterscotch chips. Just remember that the more dried ingredients you add, the more peanut butter you'll likely have to add to make sure it all holds together (about 1/4 cup peanut butter for each extra addition).


This would also make a great after school snack for the kiddos! I made these for Cole and I to snack on as we were doing a whirlwind house-hunting weekend in Savannah. We started pretty early each day, so we didn't get much of a breakfast, but these little guys got us through until lunchtime!

INGREDIENTS:

  • 3 cups oats

  • 1/2 cup honey

  • 1 1/4 cup peanut butter

  • 1/3 cup toasted coconut

  • 1/3 cup butterscotch chips (or whatever you might like)

  • 1 tsp vanilla


DIRECTIONS:

  1. Mix all ingredients together in a big bowl.

  2. When combined, place the mixture in the refrigerator for about a half hour.

  3. Roll the mixture into balls and store in an airtight container in the refrigerator.

  4. Enjoy!
