Pumpkin Pumpkin Roll

My mom and my aunts make the BEST pumpkin rolls around the holidays and I decided to put my own twist on it for Halloween!


Some people, when online shopping, get carried away and buy unnecessary clothes or electronics - for me it's baking supplies. If you haven't figured it out yet, I really like bundt cake pans, so when I found mini ones on Amazon, I had to have them. Once my brain figured out I can turn them into little pumpkins by smooshing two of them together, it was game over.


These guys are the perfect serving and they're sure to impress! I hope you all love these as much as I do!

Servings: Makes 12

Total Time: 1 hour, 30 min


INGREDIENTS:


CAKE

  • 1 1/2 cups sugar

  • 1 cup pumpkin puree

  • 4 eggs

  • 1 1/2 tsp baking soda

  • 1 cup & 2 Tbsp flour

  • Pinch of salt

  • 1 1/2 tsp cinnamon


FILLING

  • 1 (8oz) package cream cheese, softened

  • 1 tsp vanilla extract

  • 2 Tbsp butter, softened

  • 1 cup powdered sugar


DIRECTIONS FOR MINI BUNDTS:


1. Preheat oven to 375 degrees. Grease your mini bundt cake pan that I know you just ordered because you were so excited about this recipe. You can also use cupcake tins for these too I'm sure - they just won't look as pumpkin-y.

2. Beat sugar, pumpkin, and eggs for 3 minutes. Add the rest of the cake ingredients and mix well.

3. Fill your mini bundts (or cupcake tins) about halfway and bake for 12-15 minutes. Let cool completely (this is important because otherwise your frosting will melt everywhere, you'll have a mess, and no one wants that).

4. Make the filling by beating all ingredients together. Let sit in the fridge for at least an hour before sandwiching about a Tbsp of filling between two mini bundts/cupcakes. Add a Rolo or Tootsie Roll on top as a stem to add to the adorableness. Dust with powdered sugar and keep in the fridge until serving.
