S'mores Bars

As any good, self-respecting Girl Scout, I have a soft spot for S'mores. The sweetness of the chocolate paired with the soft, gooey marshmallow and the crunch of the graham cracker is such a classic flavor combo that makes you feel like a kid again! I made these bars for a Girl Scout meeting not too long ago and they were gone before I could set the plate down!

I remade these recently for work and again, they dissapeared before I knew it. The best part? They are literally 4 ingredients and it takes 15 minutes to make. Luckily, however, I had Cole to help me stir, because you do need some muscle in order to mix everything with the melted marshmallows. Think Rice Krispy treats, but with bigger and thicker cereal!

Servings: 9-16 depending how you cut them

Prep Time: 15 min

Total Time: 25 min

INGREDIENTS:

  • 3 Tbsp butter

  • 1 10oz bag of mini marshmallows

  • 5 cups Golden Grahams cereal

  • 2 Hershey's chocolate bars, crushed into small pieces (or 3/4 cup of chocolate chips)

DIRECTIONS:

  1. Spray a 9x9 inch square pan with non-stick cooking spray.

  2. In a large pot on the stove, melt the butter over medium heat. Once melted, reduce heat to low.

  3. Set aside 1 cup of marshmallows for later. Add the remaining marshmallows to the pot and stir constantly until they have melted.

  4. Remove the pot from heat and add the cereal. Stir until all the cereal has been coated with the melted butter and marshmallow mixture.

  5. Press the mixture into the prepared pan. While it's still warm, sprinkle the top of the cereal with the reserved marshmallows and crushed up chocolate bar (or chocolate chips). Gently press the marshmallows down so they stick to the bars.

  6. Let sit for at least 10 minutes to cool, then enjoy!
