Taco Dip

My marvelous live-in sous chef and I made this for Cinco de Mayo to help soak up the margaritas we had already consumed. I posted a picture of it on social media, and within a few hours, I had multiple friends contact me for the recipe.


Your wish is my command! It's super easy and you can make a lot to satisfy a crowd. Really the most difficult part is its assembly.

INGREDIENTS:


  • 1 16oz container sour cream

  • 1 package cream cheese

  • 1 package taco seasoning

  • 3 ripe avocados

  • Half an onion, diced into small pieces

  • 1 lime

  • 2 Tbsp chopped cilantro

  • 1 tsp paprika

  • 1/2 tsp cayanne pepper

  • 3/4 cup cheddar (or Mexican blend) cheese

  • 2 cups lettuce, shredded

  • 2 tomatoes, diced

  • 1/2 cup black beans

  • 1/4 cup black olives, sliced

  • 5 slices bacon, cooked and crumbled (or sliced)


DIRECTIONS:


1. Using an electric mixer, combine the sour cream, cream cheese, and taco seasoning. Once combined, spread the mixture on the bottom of an 8x13 casserole dish.

2. In another bowl, combine the avocados, a handful of diced onion, the juice of the lime, chopped cilantro, paprika, cayanne pepper, and some salt & pepper. Voila - guacamole! Spread the guacamole evenly over the top of the sour cream mixture.

3. Evenly sprinkle the lettuce, cheese, onion, tomato, beans, olives, and bacon on top of the guacamole.

4. Serve cold with tortilla chips and enjoy!!!
