Teddy Bear Oatmeal Cookies

Stinking precious, right? I saw an inspiration for these guys on Pinterest, but when I went to make them, there was no recipe connected to the picture, so I just decided to wing it and figure it out on my own!


Aside from being adorable, these cookies are the perfect oatmeal cookies. Normally I hate normal oatmeal cookies unless there's chocolate chips or raisins in it, but I added some molasses in there to darken up the nose and ears of the bears and it gave it that little extra it needed to keep it from being boring. The cookies ended up being so chewy and soft while still holding its own. Cole and I even put vanilla ice cream in between two of these little guys to make ice cream sandwiches and let me tell you that was a game changer!

Servings: 1 dozen

Total Time: 35 minutes


INGREDIENTS:

  • 3/4 cup flour

  • 1/2 tsp baking soda

  • Pinch of salt

  • 8 Tbsp (1 stick) butter, softened

  • 1/2 cup packed brown sugar

  • 1/4 cup sugar

  • 1 egg

  • 2 Tbsp milk

  • 2 tsp vanilla

  • 1 2/3 cup old-fashioned rolled oats

  • 1 1/2 Tbsp molasses

  • 1 tsp cinnamon

  • 2 Tbsp mini chocolate chips

  • 12 brown mini M&Ms (regular size would work fine, they'd just have some big noses)


DIRECTIONS:

  1. Preheat oven to 350 degrees F and prepare two baking sheets with parchment paper or silicon baking mats.

  2. In a large bowl using an electric hand-held or stand mixer, blend the butter with the brown sugar and the regular sugar until combined and fluffy.

  3. Add the egg, milk, and vanilla and mix again.

  4. With the mixer on the lowest speed, gradually add in the flour, baking soda, and salt and mix until smooth.

  5. Add in the oats and mix until just barely combined.

  6. Remove 2/3 of the mixture from the mixing bowl and place it in another bowl. In the bowl with 1/3 of the mixture still in it, add the molasses and cinnamon and mix well.

  7. Now, with clean hands, form 12 balls with the lighter oatmeal mixture and place on the prepared baking sheets (6 balls per sheet). Lightly flatten the balls into circles.

  8. Each large pale circle will now get three smaller dark circles made with the mixture with the molasses in it. One small dark circle will go on top of the bottom half of the large pale circle to be the snout. The other two small dark circles will be the ears and will go directly on the parchment paper or baking mat above but still touching the pale circle. See the above and below pictures to assist if you're confused. Add two chocolate chips for the eyes and the M&M for the nose.

  9. Bake for 12-14 minutes. Allow to cool on the baking sheets for at least 5 minutes before cooling completely on a wire rack.
