The Ultimate Peanut Butter Fudge

When I was little and visited the Amish country with my family, we would always stop at Heinis Cheese Chalet to buy literal pounds of cheese. However, my favorite treat from this particular place was not their cheese but their fudge. They had a handful of different kinds, but it was always tucked in the corner of one of their displays. My favorite was their peanut butter fudge and more often than not, I would eat the entire package on the car ride home.


This recipe is for hard-core peanut butter lovers. It has not only classic peanut butter, but also peanut butter chips, chopped peanuts, and even chopped peanut butter cookies in the mix. Although it has a little more components than the fudge I remember as a kid from the Amish country, this fudge hits the nostalgia bone pretty hard.

 

Servings: Makes 20-24 bars

Total Time: 2 hr 15 min


INGREDIENTS:

  • 2 cans sweetened condensed milk (14 oz a piece)

  • 1 cup peanut butter

  • 1 tsp vanilla extract

  • 1 10oz package of peanut butter chips

  • 1 doz Girl Scout Peanut Butter Sandwich cookies, roughly chopped (you can use Nutter Butters, too)

  • 2 cups mini marshmallows

  • 1/2 cup chopped salted peanuts


DIRECTIONS:

  1. Spray a 9x13 baking dish with cooking spray.

  2. In medium sized sauce pan, melt the sweetened condensed milk and peanut butter over medium-low heat. Cook for about 7-8 minutes, while stirring constantly. If it begins to bubble a lot, turn the heat down.

  3. Remove from heat and add the vanilla and peanut butter chips. Stir until the peanut butter chips are completely melted.

  4. Mix in the chopped cookies and marshmallows. Stir until just barely combined - I like marshmallow swirls in mine so I don't allow the marshmallows to completely melt, but it's your fudge so choose your own adventure.

  5. Working fast, pour the mixture into your prepared baking dish and spread it out evenly with a spoon. Pound the pan on the counter a few times to get any air bubbles out.

  6. Top with the chopped peanuts, cover, and let cool on the counter for a half hour, and then in the refrigerator for another hour and a half.

  7. Keep in the refrigerator until serving!
