Vanilla Biscotti

This is an easy biscotti recipe that can impress even the most hardened of coffee drinkers! This is also a great base recipe if you want to add any additional flavorings like dried fruit, nuts, or spices.


These are firm enough to hold their shape, but once you take a bite, they melt in your mouth. I dipped and drizzled some of these in dark and white chocolate and that made it even better!

Total Time: 1 hr 15 min


INGREDIENTS:

  • 6 Tbsp Butter

  • 2/3 cup sugar

  • Pinch of salt

  • 1 Tbsp vanilla extract

  • 1 1/2 tsp baking powder

  • 2 eggs

  • 2 cups flour


DIRECTIONS:

  1. Preheat oven to 350 degrees F. Lightly grease a cookie sheet or line it with a silicon baking mat.

  2. In a mixing bowl, beat the butter, sugar, salt, vanilla, and baking powder until smooth.

  3. Beat in the egg.

  4. With your mixer on low, add the flour and let mix until smooth.

  5. Place the dough on the prepared baking sheet and shape it into a rectangle shaped log that's about 2 inches high. Smooth the top with a spatula.

  6. Bake the dough for 25 minutes. Remove from the oven and let it cool completely.

  7. Reduce oven temperature to 325 degrees.

  8. Once the dough has cooled, use a serrated knife and cut the dough into 1/2 inch wide slices.

  9. Separate the biscotti slices and lay them out evenly back on the cookie sheet and place it back in the oven. Bake for 30 minutes.

  10. Place on a rack to cool completely.

  11. If you like, you can melt some chocolate to decorate the biscotti once they're cool!

These biscottis are one of my ABSOLUTE favorites!!!! Sarah included these little treasures in the guest room gift bag when my bf & I came to visit one weekend (because she’s precious) & they were freaking delicious! These were even better than store bought or coffee shop ones! My bf & I may or may not have fought over them when we got home.....😳🤤🤤🤤🥰
