Walnut Tea Cake Cookies

These are my favorite Christmas cookies that my Mom would always make when I was a kid. They are rolled in a layer of powered sugar and simply melt in your mouth - I have a hard time limiting how many I eat at a time! I have also made these using toasted almonds so again, you can choose your own adventure and change up the recipe depending on what you have the taste for.


This is an excellent, versatile cookie that goes a long way and is fairly simple to make. Plus it fills your house with the most DELICIOUS smell while they are baking in the oven. I'll admit, they aren't the most healthy thing in the world, but who said you can't indulge every once in a while?


 

Servings: Makes 2 doz cookies

Prep Time: 10 min

Total Time: 30 min


INGREDIENTS:


  • 1 1/2 cup finely chopped/ground walnuts, toasted

  • 1 1/2 cups butter (3 sticks), room temperature

  • 3/4 cup powdered sugar

  • Pinch of salt

  • 1 Tbsp vanilla extract

  • 2 3/4 cup flour


DIRECTIONS:


1. Preheat oven to 350 degrees and line a baking sheet with parchment paper or a silicon baking mat.

2. Beat the butter and powdered sugar with an electric mixer on high for about 2 minutes. reduce speed to low and add the walnuts, salt, and vanilla.

3. Add the flour a little bit at a time so you don't make it snow on your counter-tops. Make sure to use a spatula to scrape the edge of the bowl as needed throughout the mixing process. Continue to mix until all the flour is incorporated and a crumbly dough ball forms.

4. Using your hands, form small balls (a little smaller than ping pong balls) out of the dough and place on the cookie sheet. The dough won't rise very much so you can place to cookies about an inch and a half apart from each other.

5. Bake for 18 minutes, rotating the baking sheet halfway through the baking time. Once baked, cool the cookies on a cooling rack.

6. Once the cookies have cooled, roll them in additional powdered sugar. Enjoy!
