This summer, we had a small, socially distanced get together at our house and one of my co-workers and his wife brought us some beautiful tomatoes from their garden. The following day, I was tasked to make something I had never made before for a Girl Scout event, and I think I may have found my new favorite summer salad.
In the Girl Scout event, I had to make something out of random things I found in my pantry a la Chopped!, and while I was making a dipping sauce for pretzel crusted chicken out of bacon and leftover peach cobbler, I tasked Cole with making a salad out of the gorgeous tomatoes and cubed watermelon. So simple, so delicious, and an excellent edition to any meal on a hot day.

INGREDIENTS:
5 medium tomatoes chunked (about 1 inch pieces)
3 cups diced watermelon
1/2 cup crumbled goat cheese (you can use feta cheese too)
1 Tbsp red wine vinegar
Juice of half a lemon
Salt and Pepper to taste
DIRECTIONS:
Combine all ingredients in a large bowl.
